Harvesting the grapes during the cool night hours meticulously preserved their inherent freshness and quality. Following this, each individual batch underwent a controlled cool fermentation process within stainless steel vessels, with skilled guidance to maintain the essence of each varietal. The subsequent enhancement involved stirring the lees, adding a sense of length and rounded texture to the palate. This careful process led to a precise blending phase, harmonising the diverse elements into a cohesive whole. Further steps encompassed meticulous stabilisation of the wine and introduction of lemon lees, contributing an additional layer of complexity. The wine then underwent thorough filtration, guaranteeing its consistent quality before being prepared for bottling.
