Harvested during the cool night hours, the fruit retained its inherent freshness and quality. The subsequent step involved cool fermentation of individual batches within stainless steel vessels, utilising aromatic yeast strains to accentuate each distinct varietal component. Following this precise fermentation process, the wine underwent a seamless blending, imparting a harmonious balance to the final composition. Further enhancements included stabilisation and filtration to ensure consistency before being bottled.

The Selection 23 range of wines pays tribute to the original block of land where our story first started in the early 1900s.
