Winemaker Notes
Premium Pinot Noir fruit parcels underwent a meticulous process that began with carefully crushing and cold soaking. These selected parcels then experienced fermentation on skins within stainless sweep arm fermenters, a practice that lasted for a period of five to seven days. Following this, the winemaking process employed a membrane pressing technique, ensuring the extraction of valuable components. The next step encompassed a period of maturation on French oak, a process spanning approximately 3 to 4 months. The resulting wine is a harmonious blend, meticulously created through skilful blending before it was prepared for bottling.

Don and Ethel Forbes took a leap of faith on a 600-acre patch nestled by the Murray River’s sweeping bend. Today, Zilzie Winery stands on Selection 23, commemorating our journey from humble beginnings to successive generations shaping their unique paths.
