Meticulously fermenting premium fruit parcels occurred in both rotary and static fermenters. After fermenting on skins for seven to ten days, a gentle pressing followed. Subsequently, the wine matured on French oak for 3 to 6 months, allowing the gradual development of its intricate interplay of flavours. Carefully observing the maturation phase, precise blending ensued, skilfully harmonising the diverse elements. The resulting Cabernet Sauvignon attests to its exceptional attributes, displaying great depth of colour, richness, and an inviting complexity that gracefully unfolds on the palate.
The Selection 23 range of wines pays tribute to the original block of land where our story first started in the early 1900s. Don and Ethel Forbes took a leap of faith on a 600-acre patch nestled by the Murray River’s sweeping bend. Today, Zilzie Winery stands on Selection 23, commemorating our journey from humble beginnings to successive generations shaping their unique paths.
