Harvesting the fruit occurred at night when the temperature was coolest, allowing for the retention of maximum fruit flavour. Creating intensity and zest involved conducting a cool fermentation in stainless steel, utilising aromatic yeast strains, and leaving only a small portion on skins. The wine gained complexity through a three-month aging process on yeast lees before being bottled early to preserve its vibrant fruit characters.
