Winemaker Notes

The fruit was selected from premium Yarra Valley vineyards, crushed and inoculated with a selected yeast strain prior to being transferred into French oak barriques for fermentation. The wine was battonaged ‘sur lie’ weekly to increase complexity and palate texture, before blending, stabilising and bottling.
