Tasting Notes
The juicy nectarine and preserved lemons in the Zilzie Platinum Edition Fiano are balanced by generous layers of texture, a touch of spice and crisp mineral finish.
Colour
Bright pale straw.
Aroma
White nectarine, spring blossom and a hint of toasted almonds.
Palate
Layers of fruit and texture with citrus and nectarine notes. Delicate peppery phenolics and minerality create a refreshing finish and balance.
Food Match
Thai beef salad with lime zest, fresh crusty bread dipped in olive oil and balsamic vinegar or goats cheese and semi-sundried tomatoes on toasted sour dough.
Winemaker Notes
The fruit’s harvesting spanned a week to capture a range of varietal characters. Individual batches underwent cool fermentation in a combination of stainless steel, featuring various yeast strains, as well as a wild ferment component in old oak barrels to introduce spice and intrigue. Evaluation of the components took place at the end of fermentation to craft an optimal blend of fruit characteristics and wine layers.
