Harvested in the cool of the night to preserve freshness and quality, the fruit underwent cool fermentation in stainless steel in separate batches. This was followed by lees stirring to impart length and roundness to the palate. Subsequently, the wine was blended, settled, allowed to rest on lees, and then filtered prior to bottling.
