The fruit was harvested from our organic vineyard over the period of a week to give a range of varietal characters. Individual batches were cool fermented in stainless steel on toasty French oak followed by lees stirring to give length and roundness to the palate. Specialized organic yeast extracts were used to preserve wine freshness throughout the process. The wine was blended, stabilized and filtered prior to bottling.
