Fruit selected from the Clare Valley region was harvested in the cool of the night, the juice was gently pressed in order to maximise freshness and flavour. The wine was then cold settled and cool fermented in stainless steel, enhancing the natural varietal characters with yeast strains. After a short period of time on yeast less the wine was bottled to preserve freshness.
