Harvested from our organic vineyard during the cool of the night, the fruit retains its utmost freshness and quality. Following this, individual batches undergo a meticulous cool fermentation in stainless steel, complemented by months of lees stirring to enhance palate roundness and length. As a final step, the wine is skilfully blended, stabilised, and meticulously filtered before the bottling process.
