Cabernet Sauvignon and Merlot grapes from our organic vineyard were harvested in the warmth of the afternoon to assist fermentation and colour extraction. The fruit was fermented on skins for 7 days then gently pressed. The wine parcels underwent malolactic fermentation in French oak for several months with intermittent aerative movements to naturally preserve freshness and avoid reductive aromas. The wine was then blended, filtered and bottled.
