Harvesting the fruit during the coolest temperature ensured the preservation of maximum fruit flavour and freshness. Following this, the juice underwent a controlled cool fermentation process within stainless steel tanks, utilising a neutral yeast strain to highlight the inherent varietal flavours. The wine was thoughtfully kept in contact with yeast lees, a technique chosen to not only preserve its freshness but also impart a softening effect. Following secondary fermentation, the wine underwent bottling, deliberately retaining natural carbon dioxide to give rise to a refreshing spritz that adds an invigorating dimension to the final product.
