Tasting Notes

Did you know… Unlike other fruit, grapes do not continue to ripen once they have been picked. White grapes are picked during the coolest part of the night, whilst red grapes are picked just as the sun is rising and the grapes begin to warm.

Colour

Deep crimson.

Aroma

Raspberry, juicy cherry and spice characters with subtle toasty oak.

Palate

Bright flavoursome fruit and soft silky tannins.

Roasted beef fillet with sweet potato gratin or wood fired spring lamb

Winemaker Notes

Parcels of Cabernet Sauvignon and Merlot grapes were harvested at optimum maturity to maximise varietal fruit flavours and supple tannins. These parcels were fermented and left on skins for seven days to maximise colour and flavour extraction. After primary fermentation the wines were soft pressed and underwent malolactic fermentation. Aged in French oak for six months before being blended and filtered prior to bottling.
