Winemaker Notes
Harvested during the cool of the night, the fruit retained its vital freshness and quality. Following this, individual batches underwent cool fermentation in stainless steel, complemented by lees stirring to impart length and roundness to the palate. The culmination involved blending, stabilising, and meticulously filtering the wine before it was ready for bottling.
