    Tasting Notes

    It's 100 years since a butcher from Dunolly Scotland staked his young family's future on a patch of scrub on a Murray River bend at Karadoc in North West Victoria. Through hard work, perseverance and on occasion the instinct to back themselves and take a risk; the Forbes family have nurtured the Zilzie property into one of the largest family-owned vineyard and wineries in Australia.

    Colour

    Deep brick red.

    Aroma

    Intense blackcurrant, menthol, licorice, cocoa, mint, star anise and cigar-box characters.

    Palate

    A full bodied concentration of complex dark fruit highlighted by spice and menthol nuances and layers of soft, fine tannins which persist with the lingering blackcurrant finish.

    Food Match

    Veal chops in a rich marsala sauce and rice.

    Winemaker Notes

    Premium parcels of Cabernet Sauvignon fruit from regions including Coonawarra, Wrattonbully, Murray Darling, and Swan Hill vineyards were fermented separately in rotary and static fermenters. Following fermentation on skins for ten to fourteen days they were gently pressed after which the wine was matured in French oak for 12 - 18 months before blending and bottling. The resulting wine has excellent depth of colour, richness and complexity.
